please help - i have created 3 buttons to test the level of interest, however i am unsure how to make these actionable so that i can record which has been clicked.

You can track button clicks through Google Analytics.

P.S. Looking at the 3 buttons on the screenshot you’ve provided, it’s not really clear they are actually buttons. You might want to put some copywriting & visual cues, directing the visitors to pick one.
