Currently I have some custom HTML triggering a lightbox.
Is there a way to set up a Conversion Goal in Unbounce on this custom HTML lightbox so I can track engagement ? or form submission?

It really depends on the code you are using. If it wraps the content/form in an iFrame or not.
You can also setup Google Analytics events to track what you need.

The code does wrap the form in an iFrame.
Does unbounce offer some type of tracking script or pixel that I could drop in?

You can give this external conversion tracking a try but wether it would work depends on how exactly your iFrame is setup.
