' passed over as %27 through API

We’re using an API on form submit to pass data from Unbounce to SF, we’re not using the lead object so can’t use the unbounce sf integration. When a name is submitted with an ’ that is passing over the html for an ’ (%27) so contacts are being created in SF with O%27Conner Any ideas how we change the form submit to pass back an '?
