Does anyone know if it is possible to be able to monitor pages and page variants for an entire account or across sub accounts? A place to visualize and keep track of each page and variant holistically?

Based on our experience, setting up Google Analytics custom reports and/or data studio/looker reports seems to be the best way to monitor pages and their corresponding performance.
If your GA is setup properly you can set up key metrics per page, group of pages or whole domains/subdomains.
You can even make it more useful by setting up zaps that would email you snapshots in set intervals of time or ping you and your team on Slack for example.
