Is there a way to set global font settings across a landing page, such as all headers = A font, all body copy = B font?

You can use the CSS editor (bottom of the screen, right beside the JavaScript one) to set fonts. weights, styles, etc.

FYI… when you move to a css based setup you will have to do a lot more save and preview. The editor does not support previewing the css changes.
It has its pro’s and cons… but if you are good with CSS it is really the way to go.
