Drop Down Menu - Visible Fields different than data collected?

Howdy - I am trying to edit a Drop down menu so that one of the select choices reads one way, and it populates in my CRM a different way (the visible field is slightly different than the field that is in our CRM).

Is this possible? If so, how? I do not see functionality to make this happen on the LP builder but I’m sure it’s somewhere. Thanks!
