Do I get the e-mail information from a conversion

Absolutely.

If you have a form on your page that is collecting emails - make sure you set the conversion goal (from the right-hand tab in the page editor) as “form submission” so that they show up in your conversion stats.

And if you want to be notified via email whenever someone completes your form, you can set up email notifications on the “page overview” screen of your page (the same place where you see the A/B testing and stats. (See image below).
